    Prepare Dates

    Chop the pitted dates and place them in a bowl. Pour boiling water over the dates and let them soak for about 15 minutes until soft.

    Make Batter

    In a large bowl, cream together the unsalted butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Dry Ingredients

    In another bowl, sift together the all-purpose flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the soaked date mixture and milk. Mix until just combined.

    Bake Pudding

    Preheat the oven to 180°C (350°F). Grease a baking dish and pour the pudding batter into it. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

    Make Sauce

    In a saucepan over medium heat, combine the brown sugar, unsalted butter, and heavy cream for the sauce. Stir until the butter and sugar have melted and the sauce is smooth.

    Serve

    Once the pudding is baked, remove it from the oven and let it cool for a few minutes. Cut into squares and drizzle the warm toffee sauce over the top. Serve with homemade vanilla bean ice cream.
