Prepare and chill
If desired, chill a coupe or rocks glass by filling with ice water; set aside while you mix the cocktail.

Dry shake (if using egg white)
Add cachaça, fresh lime juice, fresh orange juice, simple syrup, maraschino liqueur, bitters, and egg white (if using) to a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds to emulsify and create a silky foam.

Wet shake
Add the ice to the shaker and shake hard for 12–15 seconds until the shaker is very cold to the touch and the outside is frosty. This both chills and dilutes the drink to proper balance.

Strain
Discard the ice water from the chilled glass (if used). Double-strain the cocktail into the chilled coupe or a rocks glass filled with fresh ice using a Hawthorne and a fine-mesh strainer to remove small ice shards and any solids.

Finish
Express a lime wheel over the surface to release aromatic oils, run it around the rim and drop it into the drink (or perch on the rim). Finish with a light grating of nutmeg or an orange twist over the foam for aromatic complexity.
