    Chill glass and prepare ice

    If desired, chill the old-fashioned glass in the freezer for 5–10 minutes. Prepare a large clear ice cube or fill the glass with 2–3 fresh ice cubes. A single large cube is preferred to slow dilution.

    Express orange oils and garnish

    Hold the orange peel with the outer (colored) side facing down over the glass. Give the peel a firm twist about 6 inches above the glass to express oils onto the surface of the spirit. Optionally run the rim of the glass with the peel to add aroma. Drop the peel into the glass as a garnish.

Assembly

    Place the large ice cube (or ice cubes) into the chilled old-fashioned glass.

    Measure 2 oz of Ron Zacapa 23 and pour it slowly over the ice.

    Allow the rum to rest for 10–20 seconds so the aromatic oils settle on the surface, then gently stir once or twice with a bar spoon if desired to slightly integrate temperature without over-diluting.

    Serve immediately, presenting the expressed orange peel on top of the rum for aroma. Sip slowly to enjoy the complexity of the rum.
