Method

Cocktail

  1. 1

    Prepare glass

Select a highball or hurricane glass and fill it with cracked ice to chill while you build the drink.

  2. 2

    Build the drink (shake)

In a cocktail shaker, add 1.5 oz white rum, 1.0 oz coconut rum (Malibu), 3.0 oz pineapple juice, 1.0 oz orange juice, 0.5 oz freshly squeezed lime juice, and 1 dash Angostura bitters. Fill the shaker with ice, cap, and shake vigorously for 10–12 seconds until well chilled.

  3. 3

    Strain and layer

Discard the ice from the chilled glass if desired and fill the glass with fresh cracked ice. Strain the shaken mixture into the glass over the cracked ice.

  4. 4

    Add grenadine

Slowly pour 0.25 oz grenadine down the side of the glass or over the back of a spoon so it sinks and creates a sunrise gradient toward the bottom.

  5. 5

    Garnish and finish

Garnish with a pineapple wedge and a maraschino cherry on a pick. Optionally give the drink a quick gentle stir (1–2 rotations) to slightly diffuse the grenadine if you prefer a less pronounced gradient. Serve with a straw and enjoy.
