    Combine ingredients

    In a cocktail shaker, add Hayman's Sloe Gin (2 tbs), 1.5 oz London dry gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and 0.5 oz egg white if using.

    Dry shake

    If using egg white, seal the shaker and dry-shake (no ice) vigorously for 10–15 seconds to emulsify and build foam.

    Shake with ice

    Add the cup of ice to the shaker and shake vigorously for 12–18 seconds until the outside of the shaker is very cold and the drink is well chilled and slightly diluted.

    Strain

    Double strain the cocktail into a chilled coupe or a rocks glass over a large ice cube (depending on preference) to remove ice shards and any solids.

    Finish with bitters

    Float or dot 2 dashes of Angostura bitters onto the foam/surface and, if desired, use a toothpick to make a simple decorative pattern.

Garnish & Serve

    Twist a lemon peel over the drink to express oils, then rub the peel on the rim and drop it into the glass. Alternatively, skewer a fresh sloe or garnish with a thin lemon wheel. Serve immediately.
