Cocktail

  1. 1

    Chill glass

Place a coupe or chilled Nick & Nora glass in the freezer or fill with ice water to chill while you build the cocktail.

  2. 2

    Combine ingredients

In a mixing glass add 2 oz Old Tom gin, 1 oz sweet vermouth, 0.5 oz orange curaçao, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes Angostura bitters.

  3. 3

    Add ice and stir

Fill the mixing glass with large ice cubes. Stir briskly for 20–30 seconds (about 20–30 full turns) until the mixture is well chilled and slightly diluted—glass should feel very cold.

  4. 4

    Prepare serving glass

If you chilled the glass with ice water, discard the ice water now and dry the glass.

  5. 5

    Strain and garnish

Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a julep or fine strainer to catch any small ice shards. Express an orange twist over the drink (pinch the peel to release oils), then either drop the twist into the glass or hang it on the rim as garnish.

  6. 6

    Serve

Serve immediately. Sip and note the balancing of Old Tom's slightly sweet botanicals with the vermouth and citrus; adjust syrup or lemon by 0.25 oz in future batches to taste.
