Prepare components

    Warm and prep chicken

    If using refrigerated cooked chicken, warm gently in a skillet over low heat with a teaspoon of olive oil (not listed) for 3–4 minutes until heated through, or microwave in a covered dish 1–2 minutes. Slice or shred to yield about 2 cups.

    Prepare avocado

    Halve, pit and scoop the avocado into a bowl. Mash lightly with a fork until spreadable but still slightly chunky. Stir in lemon juice, 1/4 tsp of the salt and 1/8 tsp of the black pepper to season and prevent browning.

    Slice tomato and shred cheese

    Thinly slice the tomato and shred the white cheddar if not pre-shredded. Set aside.

    Mix mayonnaise

    Place 1 tablespoon of mayonnaise on each tortilla center (total 4 tbs used). If you prefer a thinner mayo, stir 1 tsp water into the mayonnaise to loosen slightly.

Make Italian dressing (side)

    In a small bowl or jar combine 3 tbs extra-virgin olive oil, 1 tbs red wine vinegar, 0.5 tsp dried oregano, 1 tsp minced garlic, 0.5 tsp Dijon mustard, 0.5 tsp honey (or sugar), 0.25 tsp salt and 0.25 tsp black pepper. Whisk or shake vigorously until emulsified. Taste and adjust salt/acid as desired. Set aside as the side dressing.

Assemble wraps

    Lay a warmed tortilla flat on a clean surface. Spread about 1 tablespoon of the seasoned mashed avocado in a line down the center on top of the mayo layer.

    Top the avocado with approximately 1/2 cup of warmed chicken, a small handful (about 1/2 cup) of mixed greens, 2–3 slices of tomato, and 1/4 cup shredded white cheddar. Season lightly with the remaining pinch of salt and black pepper if desired.

    Fold the sides of the tortilla in toward the center, then roll tightly from the bottom up to encase the filling. Repeat for the remaining tortillas and ingredients to make 4 wraps.

    Optional: For a warm grilled finish, place each wrap seam-side down on a preheated skillet over medium heat for 1–2 minutes per side until golden and the cheese just begins to soften.

Serve

    Slice each wrap in half on the diagonal if desired. Serve immediately with the Italian dressing on the side for dipping or drizzling. Provide extra mayo or avocado on request.
