Preheat and prepare
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Combine dry ingredients
In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 2 teaspoons granulated sugar, and 1/2 teaspoon fine salt until evenly distributed.

Cut in butter
Add 1/2 cup (cold, cubed) unsalted butter to the dry mixture. Using a pastry cutter, two knives, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Mix wet ingredients
In a small bowl, beat together 1 large egg and 3 tablespoons whole milk until combined.

Form dough
Make a well in the center of the dry ingredients and pour in the egg-milk mixture. Stir gently with a wooden spoon or spatula until just combined and a soft dough forms. Do not overmix.

Shape and bake
Turn the dough onto a lightly floured surface and gently pat it into a 1-inch-thick round. Using a biscuit cutter or a glass, cut out rounds (about 8 depending on size) and place them on the prepared baking sheet about 1 inch apart. Gather scraps, gently re-pat and cut additional rounds. Brush the tops lightly with a little extra milk if desired. Bake in the preheated oven for 12–15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

Cool
Remove the scones from the oven and transfer to a wire rack. Allow them to cool for 10 minutes before serving or before adding toppings.

Prepare berries
If using fresh berries, rinse and pat them dry. Hull and quarter strawberries if using. Toss berries with 1 tablespoon powdered sugar if you want a slightly sweeter topping and let sit for 5 minutes to release juices.
