Burgers (makes 4)

1. Form patties

Divide the ground beef into four equal portions (about 4 oz each). Gently form each portion into a patty about 3/4" thick and slightly wider than the buns. Do not overwork the meat. Make a shallow 1/2" diameter dimple in the center of each patty with your thumb to prevent puffing during cooking.

2. Season patties

Place the patties on a plate and season both sides evenly with kosher salt (about 1/4 tsp per side) and freshly ground black pepper. Brush or rub each patty lightly with 1/4 tbs Worcestershire sauce total per patty (distribute the 1 tbs across the four patties).

3. Cook patties

Heat a heavy skillet or griddle over medium-high heat and add 1 tbs neutral oil. When shimmering, add the patties (do not crowd — cook in two batches if needed). Cook for 3 minutes without moving, flip, and cook 2–3 minutes more for medium (adjust time for desired doneness). In the last 30–45 seconds, place a slice of cheddar on each patty and cover the skillet with a lid or tent with foil to melt the cheese.

4. Toast buns

While the patties rest for 2–3 minutes, melt the butter in another skillet over medium heat. Halve the buns and place cut-side down in the butter until golden, about 30–60 seconds. Remove and keep warm.

5. Assemble burgers

Spread 1 tbs mayonnaise on the top bun and 1 tbs ketchup or mustard on the bottom bun (or as preferred). Place lettuce on the bottom bun, then the cheeseburger patty, tomato slice, onion rings, and pickles. Cap with the top bun and serve immediately.

Fries (oven-baked)

6. Prep potatoes

Preheat oven to 425°F (220°C). Wash and peel the potatoes if desired. Cut each potato into 1/3" to 1/2" thick sticks. Soak the cut fries in cold water for 15 minutes to remove excess starch, then drain and pat completely dry with a kitchen towel.

7. Season and bake

Toss the dried potato sticks with 2 tbs olive oil, 1 tsp kosher salt, 1/2 tsp paprika, and 1/4 tsp black pepper until evenly coated. Spread in a single layer on a parchment-lined or lightly oiled baking sheet, leaving space between pieces. Bake for 20 minutes, flip fries, then bake another 10–12 minutes until golden and crisp. Adjust time for thickness and oven. Remove and season with additional salt to taste.

Side Salad

8. Combine salad

In a large bowl, combine 4 cups mixed salad greens, sliced cucumber, and halved cherry tomatoes.

9. Make dressing & toss

Whisk together 1 tbs red wine vinegar, 2 tbs extra-virgin olive oil, 1/4 tsp salt, and 1/4 tsp black pepper. Drizzle the dressing over the salad and toss gently to coat. Serve alongside the burgers and fries.
