Cooking Instructions

1

Prepare the Salsa Verde

In a bowl, combine chopped parsley, capers, minced garlic, lemon juice, and olive oil. Season with salt and pepper to taste. Mix well and set aside.

2

Cook the White Acre Peas

In a saucepan, add the white acre peas with enough water to cover them. Bring to a boil, then reduce heat and simmer for about 10 minutes or until tender. Drain and set aside.

3

Brown the Butter

In a skillet over medium heat, melt the unsalted butter. Continue cooking until it turns golden brown and develops a nutty aroma, about 5-7 minutes. Be careful not to burn it.

4

Cook the Snapper

Season the snapper fillets with salt and black pepper. In another skillet, heat olive oil over medium-high heat. Add the snapper fillets and cook for 4-5 minutes on each side, or until golden and cooked through.

5

Serve

On a plate, place a serving of white acre peas, top with the snapper fillet, and drizzle with the brown butter. Finish with a generous spoonful of salsa verde on top.
