Breakfast Potatoes

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into small, bite-sized cubes.

    Cook the Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the cubed potatoes and season with salt, black pepper, garlic powder, onion powder, and paprika. Cook for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy.

    Garnish the Potatoes

    Once cooked, remove from heat and sprinkle with fresh parsley. Set aside.

Brisket

    Heat the Brisket

    In the same skillet (after removing the potatoes), add the cooked brisket and BBQ sauce. Stir to combine and heat through for about 5 minutes.

Eggs

    Cook the Eggs

    In another non-stick skillet, melt the butter over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Assembly

    Combine and Serve

    In serving plates, layer the crispy breakfast potatoes, top with the heated brisket, and finish with the over-easy eggs. Serve immediately.
