Prepare the Stuffing

In a mixing bowl, combine cream cheese, wasabi paste, minced garlic, salt, and black pepper. Mix until well blended.

Prepare the Chicken

Preheat the oven to 375°F (190°C). Carefully slice a pocket into each chicken breast. Stuff each pocket with the wasabi cream mixture.

Sear the Chicken

In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.

Bake the Chicken

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.

Cook the Spinach

In a separate pan, heat a little olive oil over medium heat and sauté the fresh spinach until wilted. Season with salt, pepper, and lemon juice.

Prepare the Potatoes

While the chicken is baking, boil the Yukon Gold potatoes in salted water until tender. Drain and optionally mash with a little olive oil, salt, and pepper.

Serve

Plate the stuffed chicken breasts alongside the sautéed spinach and mashed Yukon Gold potatoes.
