Prepare the Mornay Sauce

In a small saucepan, melt 2 tbsp of butter over medium heat. Add 2 tbsp of flour and stir continuously for about 1 minute to form a roux. Gradually whisk in 1 cup of milk, continuing to stir until the sauce thickens. Remove from heat and stir in the grated Gruyère cheese until melted and smooth. Season with salt, black pepper, and a pinch of nutmeg.

Cook the Bacon

In a skillet, cook the bacon slices over medium heat until crispy. Remove and drain on paper towels.

Assemble the Sandwiches

On a slice of brioche, layer a slice of ham, followed by a generous spoonful of Mornay sauce, and then another slice of brioche. Repeat for a second sandwich.

Cook the Sandwiches

In the same skillet, melt a little butter over medium heat. Place the sandwiches in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.

Poach the Eggs

Bring a pot of water to a gentle simmer. Crack an egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolk is still runny. Remove with a slotted spoon and drain on paper towels.

Serve

Top each sandwich with a poached egg and a slice of crispy bacon. Drizzle any remaining Mornay sauce over the top and serve immediately.
