For the Sticky Toffee Pudding

Method

Preparation Steps

  1. 1

    Prepare the Dates

In a bowl, combine the chopped dates with boiling water and let them soak for about 10 minutes until softened.

  2. 2

    Make the Batter

In a separate mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  3. 3

    Combine the Mixtures

Mash the soaked dates and add them to the butter mixture. Mix well. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the date mixture, stirring until just combined.

  4. 4

    Bake the Pudding

Preheat your oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes, or until a toothpick inserted comes out clean.

  5. 5

    Prepare the Sauce

In a saucepan, combine the heavy cream, brown sugar, unsalted butter, vanilla extract, and sea salt. Cook over medium heat until the mixture is thick and bubbly.

  6. 6

    Serve

Once the pudding is baked, let it cool slightly, then cut into squares. Drizzle the warm sauce over the pudding and serve with salted caramel gelato.
