    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and cut the baby potatoes in half. Toss them in a bowl with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until golden brown and tender.

    Prepare the Asparagus

    While the potatoes are roasting, wash the asparagus and trim the tough ends. Toss them in a bit of olive oil, salt, and pepper, and set aside.

    Cook the Salmon

    In a large skillet over medium-high heat, add a tablespoon of olive oil. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes or until the salmon is cooked to your preference.

    Sauté the Asparagus

    In the last few minutes of the salmon's cooking time, add the asparagus to the skillet and sauté for about 3-4 minutes until bright green and tender.

    Make the Caper Beurre Blanc

    In a small saucepan over medium heat, melt the butter. Add capers and lemon juice, stirring until the sauce is smooth and warmed through. Be careful not to let it boil.

    Plate and Serve

    On each plate, serve a portion of roasted potatoes and asparagus. Place the salmon on top and drizzle with the caper beurre blanc. Enjoy your meal!
