    Prepare the Oysters

    Preheat your oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking sheet with the deeper half of the shell facing up.

    Cook the Lardons

    In a skillet, cook lardons (or diced bacon) over medium heat until crispy. Remove and drain on paper towels.

    Make the Creamed Spinach

    In the same skillet, add butter and minced garlic. Sauté until fragrant. Add spinach and cook until wilted. Stir in mascarpone cheese, lemon juice, salt, and pepper. Mix until well combined.

    Combine Ingredients

    Fold in the cooked lardons into the creamed spinach mixture. Adjust seasoning if necessary.

    Assemble the Oysters

    Spoon a generous amount of the creamed spinach mixture onto each oyster. Sprinkle grated Parmesan cheese and breadcrumbs on top.

    Bake in the preheated oven for about 10-12 minutes or until the topping is golden and bubbly.
