Add Broth and Seasonings
Once the onions are caramelized, add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and let it cook for another 15-20 minutes to let the flavors meld together.

Prepare the Croutons
While the soup is simmering, preheat your oven to 375°F (190°C). Place the slices of crusty bread on a baking sheet, and toast them in the oven for about 10 minutes until golden and crispy.

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted bread, and sprinkle generously with Gruyère cheese.

Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown. Be careful not to burn it.
