Prepare the Mojo Smoked Leg
Start by marinating the leg in a mojo sauce (garlic, citrus juices, and spices) for at least 4 hours or overnight. Then, smoke the leg over low heat until fully cooked, about 4-5 hours.

Assemble the Sandwich
Slice the Cuban bread lengthwise. Spread a layer of dijonnaise on both sides of the bread. Layer the mojo smoked leg, followed by prosciutto de Parma, house pickles, and gruyere cheese.

Heat a panini press or skillet over medium heat. Place the assembled sandwich in the press or skillet and grill until the bread is crispy and the cheese is melted, about 5-7 minutes.

Remove the sandwich from the heat, slice it in half, and serve immediately with extra house pickles on the side.
