Preparation and Cooking

    Prepare the Pork Belly

    Start by preheating your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Rub the pork belly with salt and black pepper.

    Make the Sauce

    In a bowl, combine sesame oil, gluten-free soy sauce, honey, rice vinegar, minced garlic, minced ginger, and Inca seeds. Mix well to create a marinade.

    Marinate the Pork

    Place the pork belly in a baking dish and pour the marinade over it. Cover with plastic wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Bake the Pork Belly

    Remove the pork belly from the marinade and place it in a roasting pan. Bake in the preheated oven for about 2 hours, or until the meat is tender.

    Crisp the Skin

    Increase the oven temperature to 425°F (220°C) and bake for an additional 30-40 minutes, or until the skin is crispy and golden brown. Keep an eye on it to prevent burning.

    Finish and Serve

    Once the pork belly is crispy, remove it from the oven and let it rest for 10 minutes before slicing. Serve with additional sesame char sui sauce if desired.
