    Prepare the Marinade

    In a bowl, mix together the peanut butter, coconut milk, soy sauce, hoisin sauce, lime juice, minced garlic, and minced ginger until smooth. This will be your marinade and dipping sauce.

    Marinate the Chicken

    Cut the chicken breast into long strips. Place the chicken in a zip-lock bag or a shallow dish and pour half of the marinade over the chicken. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Prepare the Skewers

    Preheat your grill or grill pan over medium-high heat. If using wooden skewers, make sure they are soaked in water for at least 30 minutes to prevent burning.

    Skewer the Chicken

    Remove the chicken from the marinade and thread the strips onto the skewers. Leave some space between each piece for even cooking.

    Grill the Chicken

    Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.

    Serve

    Serve the chicken satay with the reserved marinade as a dipping sauce, and garnish with diced mango and chopped cilantro.
