Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season both sides generously with blackening seasoning, salt, and pepper.

Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a blackened crust.

Add Cheese
During the last minute of cooking, place a slice of pepper jack cheese on each chicken breast and cover the skillet to melt the cheese.

While the chicken is cooking, toast the brioche buns in a separate pan or toaster until golden brown.

Spread pimento ranch on the bottom half of each toasted bun. Place a lettuce leaf, the blackened chicken with melted cheese, and a slice of tomato on top. Top with the other half of the bun.
