Prepare the Aioli
In a bowl, combine mayonnaise, anchovy fillets, juice of one lemon, and a pinch of salt. Mix until smooth and set aside.

Prepare the Pork
Season the pork loin chops with salt and black pepper on both sides. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Pork
Dredge each pork chop in flour, then dip in the egg, and finally coat with panko breadcrumbs, pressing to adhere.

Cook the Pork
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded pork chops and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Plate and Serve
Serve the crispy pork Milanese topped with lemon anchovy aioli, blistered shishitos on the side, garnished with fresh basil leaves and wedges of lemon.
