Pickle the Cherry Tomatoes
In a saucepan, combine white vinegar, sugar, and a pinch of salt. Bring to a boil. Add cherry tomatoes and simmer for 5 minutes. Remove from heat and let cool in the pickling liquid.

Prepare the Summer Vegetables
Chop summer squash, zucchini, and bell pepper into bite-sized pieces. Sauté in olive oil over medium heat until just tender. Season with salt and pepper.

Cook the Mahi Mahi
Season the Mahi Mahi fillets with salt and pepper. In a skillet, heat olive oil over medium-high heat. Cook the fillets for 4-5 minutes on each side or until they are cooked through and flaky.

Plate the Dish
On each plate, spread a layer of garlic scape puree, place the cooked Mahi Mahi on top, and add the sautéed vegetables. Garnish with pickled cherry tomatoes.
