Prepare the Bread
Preheat the oven to 350°F (175°C). Tear the day-old bread into bite-sized pieces and place them in a large mixing bowl.

Mix Wet Ingredients
In a separate bowl, whisk together the milk, heavy cream, sugar, eggs, vanilla extract, and salt until well combined.

Combine and Add Butterscotch
Pour the wet mixture over the torn bread, gently folding to combine. Let it sit for about 10 minutes to allow the bread to soak up the liquid. Fold in the butterscotch chips.

Bake
Transfer the mixture to a greased baking dish and spread it out evenly. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and a toothpick inserted comes out clean.

Serve
Let the bread pudding cool slightly before serving. Top with whipped cream as desired.
