Prepare the Onion Aioli
Chop the medium onion finely and sauté it in a pan over medium heat until it becomes caramelized, about 10 minutes. Allow it to cool slightly before mixing with the mayonnaise and lemon juice. Blend until smooth, then set aside.

Blacken the Green Beans
Preheat a large skillet over medium-high heat. In a bowl, toss the green beans with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated. Add the green beans to the hot skillet and cook, stirring occasionally, until they are blistered and blackened, about 8-10 minutes.

Toast the Pepitas
While the green beans are cooking, toast the pepitas in a separate dry skillet over medium heat for about 3-4 minutes, or until they are golden and fragrant, stirring frequently to prevent burning.

Plate and Serve
Once the green beans are cooked, transfer them to a serving platter. Drizzle with the burnt onion aioli and sprinkle toasted pepitas on top. Serve immediately.
