Prepare the Potatoes
Peel the Russet potatoes and cut them into thick chips, about 1 inch wide. Rinse the cut chips in cold water to remove excess starch.

First Cook
Place the chips in a large pot of cold water. Bring to a boil and cook for 10 minutes. They should be soft but not falling apart. Drain and let them cool completely.

Second Cook
Once the chips have cooled, heat the vegetable oil in a deep fryer or a large pot to 130°C (265°F). Carefully add the chips in batches and fry for 5 minutes until they are pale and just cooked through. Remove and drain on paper towels.

Allow the chips to cool completely again for at least 30 minutes.

Increase the oil temperature to 180°C (356°F). Fry the chips in batches for an additional 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels.

Sprinkle with salt to taste while they are still hot. Serve immediately.
