Prepare the Beef
Preheat the oven to 220°C (428°F). Rub the beef roast with olive oil, then season generously with salt and black pepper.

Roast the Beef
Place the beef in a roasting pan and roast in the preheated oven for about 20 minutes. Then lower the temperature to 180°C (356°F) and roast for an additional 1 hour for medium-rare, or until desired doneness.

Prepare the Potatoes
While the beef is roasting, peel and cut the potatoes into chunks. Boil them in salted water for about 10 minutes until slightly tender, then drain and let them dry.

Make Yorkshire Puddings
Prepare the Yorkshire pudding mix according to package instructions. Pour the batter into a hot muffin tin (greased with oil) and bake for 20-25 minutes until puffed and golden.

Cook the Vegetables
Steam or boil the vegetable of the day until tender, about 5-10 minutes.

Rest the Beef
Once the beef is cooked, remove it from the oven and let it rest for 15 minutes before slicing.

Slice the beef and serve with roast potatoes, Yorkshire puddings, steamed vegetables, watercress, horseradish sauce, and beef gravy.
