Sticky Toffee Pudding

Method

Preparation

  1. 1

    Prepare the Date Mixture

In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them soak for about 15 minutes until softened.

  2. 2

    Make the Pudding Batter

In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Gradually mix in the flour and baking powder. Finally, fold in the soaked date mixture, including the water.

  3. 3

    Bake the Pudding

Preheat your oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  4. 4

    Prepare the Toffee Sauce

In a saucepan, combine the heavy cream, brown sugar, and dark treacle. Cook over medium heat, stirring until the sugar has dissolved and the sauce is smooth. Simmer for 5 minutes until slightly thickened.

  5. 5

    Serve

Once the pudding is baked, allow it to cool slightly before cutting into squares. Serve warm, drizzled with toffee sauce, and topped with candied walnuts and a scoop of sour cream ice cream.
