Omelet Preparation

    Prepare the Spinach

    In a skillet over medium heat, add the olive oil or butter. Once melted, add the fresh spinach and sauté until wilted (about 2-3 minutes). Remove from heat and set aside.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet, pour the egg mixture and let it cook for about 2-3 minutes or until the edges start to set. Use a spatula to gently lift the cooked edges while tilting the pan to allow uncooked egg to flow to the edges.

    Add Fillings

    Once the omelet is mostly set but still slightly runny on top, add the sautéed spinach and crumbled goat cheese on one half of the omelet.

    Fold and Serve

    Carefully fold the omelet in half over the fillings and let it cook for another minute. Slide the omelet onto a plate and serve immediately.
