Lemon Bar

Method

Lemon Bar

  1. 1

    Make the Lemon Filling

In another bowl, whisk together eggs, lemon juice, lemon zest, and sugar. Pour this mixture over the baked crust and bake for an additional 20-25 minutes until set. Remove from oven and let cool.

  2. 2

    Prepare Blueberry Sauce

In a saucepan over medium heat, combine blueberries, sugar, and a splash of water. Cook until the blueberries burst and the sauce thickens, about 10 minutes. Remove from heat and let cool.

  3. 3

    Make Thyme Chantilly Cream

In a mixing bowl, whip heavy cream until soft peaks form. Add powdered sugar and fresh thyme leaves, and continue whisking until stiff peaks form.

  4. 4

    Assemble and Serve

Cut the lemon bars into squares and serve with a drizzle of blueberry sauce and a dollop of thyme chantilly cream on top.
