    Prepare the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water for about 15-20 minutes, or until tender. Drain and mash with butter and milk until smooth.

    Cook the Lamb Mixture

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until softened. Add ground lamb and cook until browned. Stir in carrots, peas, thyme, salt, and black pepper, and cook for another 5 minutes. Pour in beef broth and let simmer for 10 minutes.

    Assemble the Shepherd's Pie

    Preheat the oven to 400°F (200°C). Spread the lamb mixture in an even layer in a baking dish. Top with the mashed potatoes and spread evenly. Sprinkle shredded cheddar cheese on top.
