    Prepare the Shallot Vinaigrette

    Preheat the oven to 180°C (350°F). Toss the chopped shallots in 1 tablespoon of olive oil and roast in the oven for about 15-20 minutes until golden and tender. Allow to cool slightly, then whisk together with balsamic vinegar, salt, and pepper to taste. Set aside.

    Prepare the Beef Tartare

    Finely chop the beef tenderloin and place it in a mixing bowl. Add the egg yolk, capers, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix gently until well combined.

    Toast the Sourdough

    In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sourdough slices and toast until golden brown on both sides. Remove from heat.

    Assemble the Salad

    In a bowl, toss the watercress with a drizzle of olive oil and a pinch of salt.

    Plate the Dish

    On a plate, create a round mound of the beef tartare mixture. Drizzle with truffle oil and serve alongside the watercress salad. Add roasted shallot vinaigrette on the side and serve with toasted sourdough.
