Spicy Mango Margarita

Cucumber Basil Gin Fizz

Method

Spicy Mango Margarita

    Prepare rim

    Run a lime wedge around the rim of a rocks or margarita glass and dip into a shallow plate of salt or tajín to coat. Set glass aside.

    Muddle jalapeño

    In a cocktail shaker, add 3 jalapeño slices (more or fewer to desired heat). Muddle gently to release oils — do not pulverize to avoid overwhelming heat.

    Shake

    Add blanco tequila (2 oz), mango puree (2 oz), fresh lime juice (1 oz), triple sec (0.75 oz), agave nectar (0.5 oz) and a cup of ice to the shaker. Shake vigorously for about 12–15 seconds until well chilled.

    Strain and serve

    Double-strain (using a fine mesh strainer if available) into the prepared glass over fresh ice. Garnish with a mango wedge and a thin jalapeño slice. Serve immediately.

Smoked Old Fashioned

    Build drink

    In a mixing glass, combine demerara or simple syrup (0.25 oz) and 2 dashes angostura bitters. Add bourbon (2 oz) and one large ice cube.

    Stir

    Stir the mixture for about 20–30 seconds until well chilled and slightly diluted (about 20–25% dilution).

    Smoke (optional)

    If using a smoking gun or smoking wood chip: place the stirred cocktail in a short rocks glass, cover with a glass cloche or inverted mixing tin, and introduce smoke for 10–20 seconds. Let sit under cover for 20–30 seconds to infuse.

    Finish and garnish

    Express an orange peel over the glass by pinching it to release oils, then rub the rim with the peel and drop it into the drink. Serve with the large ice cube. If no smoker is available, simply garnish and serve.

Cucumber Basil Gin Fizz

    Muddle cucumber and basil

    In a shaker, add 4 cucumber slices and 6 basil leaves with 0.5 oz simple syrup. Gently muddle to release juices and aromatics, taking care not to shred the basil too finely.

    Add liquids and shake

    Add dry gin (1.5 oz), fresh lemon juice (0.75 oz), and a cup of ice. Shake vigorously for 10–12 seconds until chilled.

    Strain and top

    Fine-strain into a chilled Collins or highball glass filled with fresh ice. Top with 2 oz club soda and stir gently to combine.

    Garnish

    Garnish with a cucumber ribbon and a small basil sprig. Serve immediately.

Espresso Chocolate Martini

    Chill glass

    Place a martini or coupe glass in the freezer or fill with ice water to chill while preparing the cocktail.

    Shake

    In a shaker, add vodka (1.5 oz), coffee liqueur (1 oz), fresh espresso (1 oz), chocolate liqueur (0.5 oz) and optional simple syrup (0.25 oz) with a cup of ice. Shake vigorously for 15–20 seconds to create a foamy top from the espresso.

    Strain and serve

    Discard ice from chilled glass, double-strain the cocktail into the glass to remove ice shards and crema solids. Garnish with 3 espresso beans. Serve immediately.
