Make crumb
Place gluten-free chocolate cookies/wafers, cocoa powder, and granulated sugar (if using) in a food processor. Pulse until coarse-fine crumbs form. With the processor running, drizzle in melted butter until crumbs hold together when squeezed. Transfer to a bowl and set aside to cool.

Soften Nutella
If Nutella is very stiff, gently warm it to soften: place the jar or the measured Nutella in a heatproof bowl and set over a pot of barely simmering water for 1–2 minutes, stirring occasionally, or microwave in 15-second bursts, stirring between, until smooth but not hot.

Beat cream cheese and Nutella
In a medium bowl, beat the room-temperature cream cheese with an electric mixer until smooth and free of lumps (about 1–2 minutes). Add the slightly warm Nutella, powdered sugar, vanilla extract, and a pinch of salt. Beat until combined and smooth, scraping the bowl once or twice.

Whip cream
In a separate chilled bowl, pour the cold heavy cream. Using clean beaters, whip the cream to soft-medium peaks (when the whisk leaves a visible trail and peaks hold but slightly fold over).

Fold together
Fold one-third of the whipped cream into the Nutella-cream cheese mixture gently to loosen it, then fold in the remaining whipped cream carefully until uniform and airy, avoiding overmixing. Taste and adjust salt or sweetness if needed.

Chill mousse
Spoon or pipe the mousse into serving glasses or bowls, filling about 3/4 full if adding crumb layers. Cover and refrigerate for at least 1 hour to set (ideally 2–3 hours).
Assemble and Garnish

If assembling layered, place a spoonful (about 1–2 tbsp) of chocolate crumb in the bottom of each serving glass, then pipe or spoon mousse over the crumb. Reserve some crumb for topping.

Top each mousse with 2 halved Amarena cherries and drizzle with 1 tsp of the reserved Amarena syrup per serving. Sprinkle remaining chocolate crumb on top.

Finish with optional toasted hazelnuts and dark chocolate shavings. Serve chilled. Mousse will keep covered in the refrigerator for up to 2 days; crumbs may soften over time.
