Method
Guacamole
- 1
Prepare avocados
Cut the avocados in half lengthwise, remove the pits and scoop the flesh into a medium mixing bowl.
- 2
- 3
Add aromatics
Fold in the finely diced red onion, minced jalapeño (start with half if you prefer milder heat), chopped cilantro, and the diced tomato if using. Sprinkle in the ground cumin if desired and add the black pepper. Taste and adjust seasoning with additional salt or lime juice as needed.
- 4
If not serving immediately, press a piece of plastic wrap directly onto the surface of the guacamole to minimize air exposure and refrigerate up to 2 hours. For best texture, serve within 30–60 minutes of making.
To Serve
- 5
Spoon the guacamole into a shallow bowl and garnish with a few cilantro leaves if desired.
- 6
Serve with organic blue corn chips on the side and lime wedges for squeezing over the guacamole.
- 7
Recommend portioning about 3–4 oz guacamole per 2 people as an appetizer — this recipe yields roughly 3 cups, enough for 4–6 people depending on appetite.
