    Juice the limes

    Roll limes firmly on the counter to loosen juices. Cut limes in half and strain or press until you have 1 cup (approximately 8–10 limes depending on size) of fresh lime juice. Remove seeds.

    Dissolve sugar

    In a small saucepan, combine 3 tablespoons granulated sugar and 1/2 cup of the water. Warm gently over low heat, stirring until the sugar is completely dissolved to make a quick syrup. Remove from heat and let cool slightly. (Alternatively use 2 tablespoons prepared simple syrup and skip this step.)

    Combine and dilute

    In a pitcher, combine the strained fresh lime juice, the cooled sugar syrup (or simple syrup), and the remaining 3.5 cups of cold water. Stir thoroughly and taste. Adjust sweetness by adding up to 2 additional tablespoons simple syrup or more water if too tart.

    Add salt (optional)

    If using, stir in a small pinch (about 1/8–1/4 tsp) of salt to brighten the flavors. Mix well.

    Chill and serve

    Fill glasses with ice. Pour limeade over the ice. Garnish each glass with a fresh lime slice and 2–3 mint leaves if using. Serve immediately.

    Make ahead & store

    Refrigerate leftover limeade in a sealed container for up to 3 days. Stir or shake before serving, as separation may occur. Add fresh ice and garnish when serving.
