Heat water and brew
Bring 6 cups of water to a rolling boil (about 212°F / 100°C). Remove from heat and add 6 teaspoons of loose-leaf black tea (or 6 black tea bags). Steep for 4–5 minutes for a full-bodied iced tea. Do not over-steep to avoid bitterness.

Sweeten
While the tea steeps, dissolve 1 tablespoon granulated sugar in 2 tablespoons hot water to make a quick syrup. Stir until fully dissolved. If you prefer unsweetened, skip this step.

Strain and cool
After steeping, remove tea leaves or bags and pour the brewed tea into a heatproof pitcher. Stir in the dissolved sugar (if using). Let the tea come to room temperature (about 20–30 minutes) or place the pitcher in an ice bath to cool faster.

Heat water and brew gently
Heat 6 cups of water to about 175–185°F (80–85°C). If you don't have a thermometer, bring to a simmer and let sit 1–2 minutes. Add 4 teaspoons loose-leaf green tea (or 4 green tea bags) and steep for 2–3 minutes. Green tea becomes bitter if steeped too long or at too high a temperature.

Sweeten and flavor
While the tea steeps, stir 2 teaspoons honey into a small amount of the hot brewed tea until dissolved. If using simple syrup, add to taste after tasting the brewed tea. If using fresh mint leaves, lightly bruise them to release aroma and place them into the pitcher.

Strain and cool
Remove the tea leaves or bags and pour the brewed green tea into a pitcher. Stir in the honey (or syrup) and the bruised mint leaves. Let cool to room temperature (15–30 minutes) or use an ice bath to speed cooling.

Chill and serve
Refrigerate until cold or pour over 3 cups of ice in a serving pitcher to chill immediately. Garnish with a lime wheel or extra mint sprig if desired, and serve.
