Preheat and prepare
Preheat the oven to 325°F (160°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat for easy release and cleanup.

Mix dry ingredients
In a large mixing bowl combine 3 cups rolled oats, 1 cup chopped almonds, 1/2 cup chopped walnuts, 1/2 cup shredded coconut, 2 tbsp flaxseed meal, 1/4 cup pumpkin seeds and 1/4 cup sunflower seeds. Add 1 tsp ground cinnamon and 1/2 tsp fine sea salt and toss to distribute evenly.

Combine wet ingredients
In a small saucepan or microwave-safe bowl, warm 1/2 cup maple syrup, 3 tbsp neutral oil and 2 tbsp packed brown sugar just until the sugar dissolves and mixture is warm (do not boil). Stir in 1 tsp vanilla extract.

Coat and spread
Pour the warm maple-oil mixture over the dry oat mixture. Using a spatula, fold and toss until the dry ingredients are evenly coated and slightly sticky. Spread the mixture in an even layer on the prepared baking sheet, pressing gently to help clusters form.

Bake, stir, and crisp
Bake for 20 minutes, then remove the sheet and using a spatula gently turn the granola for even browning (press again if you want larger clusters). Return to the oven and bake an additional 10–12 minutes or until golden brown and fragrant. Watch closely last 5 minutes to avoid burning.

Add dried fruit and cool
Remove granola from the oven and immediately sprinkle the optional 1/2 cup dried fruit over the hot granola and gently press it in. Let the granola cool completely on the baking sheet (30–45 minutes) — it will crisp as it cools. Once cool, break into clusters and transfer to an airtight container for up to 2 weeks.

Top with granola and berries: spoon about 3/4 to 1 cup of cooled granola over each bowl of yogurt (adjust to taste). Evenly distribute the fresh strawberries, blueberries, and raspberries across the 4 bowls.

Finish with maple drizzle and garnish: lightly drizzle 1 tbsp pure maple syrup over each bowl (use remaining maple to taste). Garnish with 2 fresh mint leaves per bowl if desired.

Serve immediately: serve right away so the granola stays crisp. Store any leftover granola in an airtight container at room temperature.
