Prepare equipment
Ensure espresso machine (or stovetop espresso maker) is warmed up. Clean portafilter, group head and steam wand. Preheat the cup by rinsing with hot water and discard water.

Grind beans
Weigh 18 g of fresh whole beans. Grind to a fine espresso grind — slightly coarser than powdered sugar but fine enough to resist water flow for ~25–30 seconds extraction in a double basket. Adjust grind if extraction time is off.
Pulling espresso

Dose and tamp
Distribute ground coffee evenly in a 18–20 g double basket, then tamp with 30 lbs (≈13.6 kg) of pressure to create a level puck. Wipe rim of portafilter.

Extract espresso
Lock portafilter into the group head and start extraction. Aim for ~36 ml of espresso in 25–30 seconds (yield may vary with machine). Stop extraction when volume/time target is reached. Pour into preheated 150–180 ml cappuccino cup.
Steaming milk

Fill pitcher
Pour 150 ml whole milk into a chilled stainless-steel steaming pitcher to allow room for expansion. Use extra 30 ml on hand in case of adjustments.

Purge steam wand
Purge the steam wand briefly to expel condensation before inserting into milk.

Steam technique
Insert wand just below the surface and turn on steam to create texture (a gentle hissing, not a loud screech) for 3–4 seconds to introduce microfoam (stretching). Then lower the pitcher slightly so the wand is deeper in the milk and continue steaming to raise temperature to 60–65°C (140–149°F). Aim for velvety microfoam with very small, glossy bubbles. Total steaming time ~20–30 seconds depending on equipment.

Polish milk
Turn off steam, wipe and purge wand. Tap the pitcher on the counter to remove large bubbles and swirl milk to integrate foam and liquid for a smooth texture.
Assembling the cappuccino

Pour milk over espresso
Hold the cup with pulled espresso at a slight angle. Begin pouring milk from a few inches above to incorporate milk with espresso for a uniform color, then bring the pitcher spout closer and pour more deliberately to allow a 1:1:1 ratio layering (roughly one third espresso, one third steamed milk, one third foam). Aim for a final volume of about 150–180 ml in the cup.

Finish and garnish
If desired, use the last pour to create a simple latte-art heart or rosetta. Lightly dust with cocoa powder or ground cinnamon (about 1 tsp) and sweeten with sugar or simple syrup to taste (approx. 1 tsp). Serve immediately.
Cleaning

Purge and wipe steam wand again. Knock out used puck, rinse portafilter and flush group head. Rinse and dry pitcher and cup. Proper cleaning preserves flavor and equipment life.
