Preparing the Mozzarella

Making the Mozzarella Strings
In a pot, heat water until just below boiling. Add salt and stir to dissolve. Tear the fresh mozzarella into small pieces and add to the hot water. Let it sit for about 5 minutes to soften.

Stretching the Cheese
Using your hands (wear gloves if preferred), stretch and pull the mozzarella into thin strings. Shape them into bite-sized pieces or strands, and set aside.
Making the Puffed Pizza Dough

Activating the Yeast
In a mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

Mixing the Dough
In a large bowl, mix the all-purpose flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.

Kneading the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shaping and Blistering the Dough
Preheat your oven to 475°F (245°C). Punch down the risen dough and divide into small portions. Roll each portion into a flat disc. Bake them on a baking sheet for about 8-10 minutes until they are puffed and blistered.

On a serving plate, arrange the mozzarella strings and blistered pizza dough. Drizzle with extra virgin olive oil, sprinkle with fresh basil leaves, and add a pinch of sea salt. Serve immediately.
