Preparation of Quinoa

Cook Quinoa
In a medium saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for about 15 minutes or until liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Caramelizing Onions

Caramelize Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until onions are golden brown and caramelized.
Burger Mixture

Mix Ingredients
In a large bowl, combine cooked quinoa, black beans, grated carrot, diced red bell pepper, caramelized onions, minced garlic, chopped cilantro, beaten egg, bread crumbs, cumin, salt, and pepper. Mix well until all ingredients are combined.

Form Patties
Divide the mixture into 4 equal portions and shape them into burger patties. Place them on a plate and refrigerate for at least 30 minutes to firm up.
Cooking the Burgers

Cook Patties
In the same skillet, add the remaining tablespoon of olive oil over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side or until golden brown and heated through.
Assembling the Burger

Assemble Burger
On a bun, place a quinoa burger patty, top with a slice of VT cheddar cheese, drizzle with BBQ sauce, and add crispy onions. Serve warm.
