Method

Cook the Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add salt to the boiling water and then add the pasta. Cook according to package instructions until al dente, usually around 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta and set it aside, reserving about 1/2 cup of pasta water.

Prepare the Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop all the vegetables: bell pepper, zucchini, cherry tomatoes, carrot, and broccoli into bite-sized pieces.

Make the Sauce

    Sauté Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Vegetables

    Add the chopped vegetables to the skillet and stir-fry for about 5-7 minutes until they are tender but still crisp.

    Add Broth and Seasoning

    Pour in the vegetable broth, salt, and black pepper. Stir to combine and cook for another 2-3 minutes.

    Combine Pasta and Sauce

    Add the drained pasta to the skillet and mix well. If the mixture seems dry, add a bit of the reserved pasta water.

    Add Cheese and Basil

    Remove the skillet from heat and stir in the grated Parmesan cheese and chopped fresh basil until well combined.

Serve

    Plate the Pasta

    Serve the Pasta Primavera warm, garnished with extra Parmesan cheese and fresh basil if desired.
