    Marinate the Chicken

    In a large bowl, combine buttermilk and hot sauce. Add the chicken thighs, making sure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Breading

    In another bowl, mix the flour, cayenne pepper, paprika, garlic powder, salt, and pepper. Remove chicken from buttermilk and let excess drip off. Dredge each piece in the flour mixture until well-coated.

    Fry the Chicken

    Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken thighs in batches until golden brown and cooked through, about 6-8 minutes per side. Transfer to a paper towel-lined plate to drain.

    Mix the Sauce

    In a small bowl, combine crumbled blue cheese, mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper. Stir until well blended and creamy.

For the Coleslaw

    In a large bowl, mix shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate until ready to use.

    Assemble the Sandwiches

    Toast the brioche buns lightly. On the bottom half of each bun, place a piece of fried chicken, followed by dill pickle slices and a generous dollop of blue cheese sauce. Top with coleslaw and cover with the top half of the bun. Serve with a side of crispy steak fries.
