Chicken Marinade
Seasonal Vegetables
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a medium bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- 2
Marinate the Chicken
Place the chicken breasts into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
Grilling the Chicken
- 3
Preheat the Grill
Preheat your grill to medium-high heat, approximately 375°F to 450°F (190°C to 230°C).
- 4
Cook the Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- 5
Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Preparing the Vegetables
- 6
Prepare the Vegetables
While the chicken is marinating, prepare the seasonal vegetables. In a large bowl, toss the zucchini, bell pepper, and asparagus with olive oil, salt, and pepper.
- 7
Grill the Vegetables
Place the prepared vegetables on the grill, cooking them alongside the chicken for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
Serving
- 8
Plate the Dish
Slice the grilled chicken and arrange it on a serving platter with the grilled seasonal vegetables. Serve immediately.
