For the Battered Fish

    Prepare the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water to the dry ingredients, mixing until smooth. The batter should be thick enough to coat the back of a spoon.

    Heat the Oil

    In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat to 350°F (175°C). Use a thermometer for accuracy.

    Batter the Fish

    Dip each fish fillet into the batter, ensuring they are evenly coated.

    Fry the Fish

    Carefully place the battered fish fillets in the hot oil, frying in batches to avoid overcrowding. Cook for 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Peel and cut the russet potatoes into thick strips. Rinse in cold water to remove excess starch, then pat dry with paper towels.
