Method
Fish
- 1
Prepare the batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Slowly whisk in the beer until the mixture is smooth and has no lumps. Let the batter sit for about 15 minutes.
- 2
Heat the oil
In a deep-fryer or a large pot, heat the vegetable oil to 350°F (175°C).
- 3
Batter the cod
Dip each cod fillet into the batter, ensuring it is fully coated.
- 4
Fry the fish
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove the fish and drain on paper towels.
Fries
- 5
Prepare the potatoes
Peel the potatoes and cut them into thick fries. Rinse them under cold water to remove excess starch.
- 6
Heat the oil
In a separate deep-fryer or pot, heat the vegetable oil to 350°F (175°C).
- 7
Fry the fries
Fry the potato fries in the hot oil for 5-7 minutes until they are golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.
Tartar Sauce
- 8
Mix the sauce
In a small bowl, combine the mayonnaise, finely chopped dill pickles, lemon juice, capers, salt, and black pepper. Stir until well mixed and refrigerate until ready to serve.
