Prepare Fries

Cut Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Dry Potatoes
Drain the potatoes and pat them dry with a clean towel.

Heat Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Fry Potatoes
Carefully add the fries in batches to the hot oil. Fry until golden brown and crispy, about 5-7 minutes.

Drain and Season
Remove the fries and drain on paper towels. Season with salt to taste.
Make Chili

Cook Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon.

Add Remaining Ingredients
Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, black pepper, and water. Mix well.

Simmer Chili
Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.
Assemble Chili Fries

Layer Fries and Chili
On a serving platter, layer the crispy fries and top them generously with the chili mixture.

Sprinkle the shredded cheddar cheese over the hot chili fries.
