Salmon Preparation

Prepare the Salmon
Season the Atlantic salmon fillets with salt and black pepper on both sides. Heat olive oil in a large skillet over medium-high heat.

Pan Roast the Salmon
Place the salmon fillets skin-side down in the skillet and cook for about 4-5 minutes, until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until the fish is opaque and flakes easily. Remove from heat and keep warm.

Butternut Squash Preparation

Roast the Butternut Squash
Peel, seed, and cube the butternut squash. Toss the cubes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes, or until tender and slightly caramelized.
Wilted Spinach Preparation

Sauté the Spinach
In the same skillet, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the fresh spinach and salt, and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
