Preparing the Vegetables

Prepare Carrots
Peel and cut the carrots into sticks or rounds. In a small bowl, mix honey and balsamic vinegar. Toss the carrots in the mixture and set aside to marinate.

Cooking the Steak

Cook Flat Iron Steak
Season the flat iron steak with salt and black pepper on both sides. Heat a skillet over high heat and add a tablespoon of olive oil. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for about 5 minutes before slicing.

Roast Carrots and Potatoes
Preheat the oven to 425°F (220°C). Spread the marinated carrots and halved fingerling potatoes on a baking sheet in a single layer. Roast in the oven for 20-25 minutes or until tender and caramelized, stirring halfway through.

Cook Petite Onions
Place the petite onions on a separate baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for the last 15 minutes of the carrots and potatoes cooking time, until they are soft and slightly browned.
