Chill glass and ingredients

Place a wine or rocks glass in the freezer for 10–15 minutes, or fill it with ice while preparing ingredients so the cocktail stays cold. Ensure Prosecco and soda water are well chilled.

Add ice

Fill the chilled glass with 4 large ice cubes, leaving some room at the top for liquids and gentle stirring.

Pour Aperol

Measure and pour 2 oz Aperol over the ice. Pouring first helps the color layer attractively before mixing.

Add Prosecco

Slowly pour 3 oz chilled Prosecco into the glass. Pour gently down the side or over a bar spoon to preserve some effervescence and create a layered look.

Top with soda

Add 1 oz chilled soda water to the glass to brighten and lighten the drink. Adjust soda slightly (±0.5 oz) to taste.

Stir gently

Using a bar spoon, gently stir the cocktail once or twice to combine — avoid vigorous stirring to keep bubbles. One smooth turn or two is sufficient.

Garnish and serve

Garnish with 1 fresh orange slice on the rim or floated on the surface. Optionally add a green olive or a small rosemary sprig for an herbal note. Serve immediately while cold and effervescent.
